How about a little twist on guacamole that’ll get you some praise at your summer BBQs. It’ll also give you a taste of the tropics and I’m sure we can all use some of that right about now.

INGREDIENTS

  • 2 avocados
  • 1/2 cup pineapple or mango, chopped
  • 1/2 onion, diced
  • 1-2 jalapeño peppers, diced (enough for desired spice)
  • 2 kale leaves, de-stemmed and finely chopped (ideally in a food processor)
  • 1 tomato, diced
  • 1/2 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • 1-2 cloves of garlic, finely chopped
  • pinch of salt
  • 1/2 tsp of pepper

TIPS:

  • soak the onion in lime juice for 10 minutes to soften and reduce the overpowering onion taste
  • to keep fresh: flatten the guacomole in the dish and add a thin layer of lime juice then seal tight with cover or food wrap

INSTRUCTIONS

  1. While the onions are soaking, mash the avocados in a bowl
  2. Gently fold in the jalapeño, kale, tomato, mango/pineapple, cilantro, garlic and onion
  3. Add the salt, pepper and lime juice
  4. Enjoy with meal or as an appetizer!
