How about a little twist on guacamole that’ll get you some praise at your summer BBQs. It’ll also give you a taste of the tropics and I’m sure we can all use some of that right about now.
INGREDIENTS
- 2 avocados
- 1/2 cup pineapple or mango, chopped
- 1/2 onion, diced
- 1-2 jalapeño peppers, diced (enough for desired spice)
- 2 kale leaves, de-stemmed and finely chopped (ideally in a food processor)
- 1 tomato, diced
- 1/2 lime, juiced
- 2 tbsp fresh cilantro, chopped
- 1-2 cloves of garlic, finely chopped
- pinch of salt
- 1/2 tsp of pepper
TIPS:
- soak the onion in lime juice for 10 minutes to soften and reduce the overpowering onion taste
- to keep fresh: flatten the guacomole in the dish and add a thin layer of lime juice then seal tight with cover or food wrap
INSTRUCTIONS
- While the onions are soaking, mash the avocados in a bowl
- Gently fold in the jalapeño, kale, tomato, mango/pineapple, cilantro, garlic and onion
- Add the salt, pepper and lime juice
- Enjoy with meal or as an appetizer!
